The University of West London are hosting another inspiring Future Plates, Future Food event to launch Today’s Menu website. This is a free tool to change the food system for the better.
Today’s Menu is a resource for UK based food service providers. Those who want to make DELICIOUS food whilst bringing about positive change in the food system. Chefs have the power to shape food trends, so it’s time we use this power positively! Cultivating, raising and using the foods in Today’s menu are all in collaboration with natural ecosystems including human communities. The is food production is without chemicals and in support of biological processes. This holistic approach to production equally considers regenerating the environment and meeting human food requirements. Plus considering the wellbeing of food system workers, highlighting the integration of ecological and social factors.
The principle of food justice is central to Today’s menu- access to affordable, truly nutritious food for all is a key goal. By adopting these practices, production can enhance biodiversity, restore both ecosystems and models of community ownership. This will promote the production of nutritious, culturally appropriate food options.
Developed by a team of chefs and growers, each section of Today’s Menu has been meticulously researched with the help of industry leaders, such as The Sustainable Restaurant Association, The Sustainable Food Trust and The UK Grain Lab to name a few. The result is a resource that’s packed with information, recipes and interviews, empowering businesses to make informed, impactful procurement choices.

- Presentation and Panel Discussion: Including Agroecology, The State of Farming, Importance of Farmer to Chef being flexible
- Food demos with tasters: From Offal to oyster mushrooms, great line up of chefs cooking up a storm. Guests will rotate around the 6 stations
- Introduction to Todays Menu Resource. Plus a Ready steady cook activity
- Food Concepts and Networking: Explore the Gut loving kitchen and A Mindful kitchen.
